Recipe: Apple & Pear Galette

There’s something beautifully imperfect about a galette. Unlike a pie, with its carefully pinched edges and structured dish, a galette is free-form, rolled out on the counter, filled with fruit, and folded up in gentle, rustic pleats. No two ever look the same, and that’s part of the charm.

While a pie feels like a celebration, a galette feels like a quiet afternoon... simple, unfussy, yet deeply comforting. The crust bakes golden and crisp all the way around, while the fruit bubbles over in the center, spilling just enough to caramelize at the edges. It’s the kind of dessert that doesn’t ask for perfection, only good ingredients and a little care.

In many ways, a galette is a picture of what we love about fall baking: slowing down, savoring what’s in season, and finding beauty in the unpolished moments.
